Quick! When we say “holiday cocktail,” what’s the first thing that comes to mind? Eggnog, right? There’s no denying that it’s the quintessential festive beverage, but it’s also the one of the season’s top calorie boosters. Save your splurge for the pie and try this lighter, ladylike version made with kefir instead. That’s right, the superfood that’s known to boost immunity, regulate blood sugar and gloss up your hair is now bourbon’s best friend. So mix up some merry and have a glass…or three. It’s healthy after all!
WHAT YOU’LL NEED
3 cups organic kefir
4 eggs
1/3 cup sugar + 1 teaspoon
1/2 teaspoon freshly ground nutmeg + extra for garnish
3 ounces bourbon
HOW TO MAKE IT…
Separate eggs. Beat the egg yolks with a mixer until they lighten in color. Add 1/3 cup sugar and continue to beat until sugar is completely dissolved. Set aside.
In a saucepan, bring the kefir and nutmeg to a low boil. Remove from heat and gradually temper the hot kefir into the egg yolks. Then return mixture to the pot and cook until it reaches 160 degrees Fahrenheit or coats the back of a spoon. Remove from heat and stir in bourbon. Chill in refrigerator.
In another mixing bowl, beat the egg whites until soft peaks form. Slowly add 1 teaspoon sugar and beat until stiff peaks form. Whisk the egg whites into the chilled mixture and pour into a glass. Sprinkle with fresh nutmeg and serve.
